COSTA RICA LAS LAJAS: FINCA LA MIRELLA
Las Lajas Mill: This excellent micro-lot comes from an organic mill in Sabanilla de Alajuela in the Central Valley region of Costa Rica. Las Lajas mill is operated by third generation producers Dona Francisca and Don Oscar Chacon. The mill is known for being among the first to produce high-quality Honeys and Naturals in Central America.

Processing: This lot was processed using a method called Perla Negra. The coffee seed is left in the fruit and laid out on a patio to dry in the sun for ten days. During this stage, the coffee is constantly rotated to ensure uniformity. Next, the coffee is transferred to bags where it is left for two to three days. After which, the coffee is spread on raised beds to finish drying. Once again the coffee is rotated to maintain uniformity while drying.
The Cup: Balanced, rich and sweet with tart winey acidity and a smooth mouthfeel; very fruity with sugary flavors, apple, lime, cherry, and chocolate flavors.
