Las Lajas Mill: This excellent micro-lot comes from an organic mill in Sabanilla de Alajuela in the Central Valley region of Costa Rica. Las Lajas mill is operated by third generation producers Dona Francisca and Don Oscar Chacon. The mill is known for being among the first to produce high quality Honeys and Naturals in Central America.

Processing: 100 percent of the mucilage is left on the coffee. This particular lot is processed using the Yellow Honey method where coffee is turned hourly on raised beds. Honey and Natural processing have become a popular means of differentiation in a market saturated with clean, bright, Central American washed coffees. The heavy body and fruit forward profile of a Natural process combined with multiple sorting stages creates a unique flavor with the consistency of a washed coffee. Additionally both Honey and Natural processing methods minimize water usage.
The Cup: Big lime, honey and cherry with some floral flavor; syrupy sweetness and tangy winey acidity.
